Beef, Bean n Barley Stew

2 tablespoons butter
1 very large onion, sliced
2 to 3 pounds beef  short rib or chuck
2 carrots grated
Beef Stock
Paprika to taste
1 clove garlic
1 teaspoon salt
Plenty of freshly ground black pepper
1 punnet chopped mushrooms
1 cup red wine
1 small tomato paste
1/2 cup barley
1 tin red kidney beans
1 tsp Italian herbs

In a large skillet brown meat then remove.
Fry Onion until translucent then add all  ingredients
Cook until barley is soft and enlarged.
You can also add potatoes to stretch it farther.
For best results let it stand overnight.
