Pea and Ham Soup

INGREDIENTS
1 Tbl Butter
800g Ham Steak, diced
3 Carrots
1 litre Chicken Stock
250g Split Peas, soaked overnight
2 Onions, chopped
2 cloves Garlic
Thyme
2 sticks Celery and leaves, chopped
1 Bay Leaf
2 Tsp Lemon Juice
1 large Potato
Cayenne Pepper

METHOD
Combine stocks and ham.
Boil for 30 - 60 mins
Remove ham.
Add onion, thyme, peas and simmer for 45 mins
Process in a blender
Reheat and add carrots and ham.
